Tim's Chipotle Sauce was born in 1998 on a late afternoon in Laguna Beach while i was rushing to make an appetizer for an EVENING get together. I DECIDED TO TRY A NEW recipe WHICH i WAS told was ALWAYS a CROWD pleaser, yet I did not have all the necessary ingredients.

This is where an accident helped TO make a very delicious discovery.

being creative I decided to improvise WITHOUT ALL THE INGREDIENTS REQUIRED. Fortunately the items I had in my kitchen were enough to produce a bowl of something special. My first taste of this dip introduced my taste buds to something they never HAD EXPERIENCED before.

i rushed OFF to the party AND SOON noticed a few people SEEMED TO BE ENJOYING my bowl of dip. I never mentioned THIS was an accidental concoction, INSTEAD I SHARED THAT this DIP was THE RESULT OF my best EFFORTS TRYING OUT a new recipe.  As the night continued and the margaritas flowed, people at the party began to give me some honest OPINIONS ABOUT MY dip. First they wanted to know if there were ANY more chips, then they wanted more dip, some asked me about the ingredients, and others asked if I really made this or if it was store bought. I explained over and over it was a new chipotle dip recipe that I wanted to try out. This led to many questions about what a chipotle pepper was. The night ended with me taking home a bowl that didn't need to be washed, since every drop of dip was consumed (I washed the bowl - that would be gross to think otherwise).

the following week, I decided to make the chipotle dip again. This time I made some notes of the ingredients and quantities. I also began to develop my technique for putting the mixture together. i arrived at the party with 2 bags of chips and a larger bowl of chipotle dip in all of its chilled glory. A few people from the previous party were excited to see I had made another batch of my delicious dip. people encouraged new comers to give my dip a try, and others suggested we save some as a dipping sauce for the tri-tip being served. once Again, at the end of the night the empty bowl and many compliments were handed to me.

As time went on, my friends kept asking me to make the dip. people I met at parties suggested that I bottle and sell the dip. it was then that I knew I was on to something that no one else could replicate. interestingly it was around the same time many restaurants began offering chipotle sauce or chipotle flavored food items.  I wondered if a restaurant executive was at one of the parties and also knew a great new sauce when they tasted it.  A few friends and even co-workers attempted to recreate my culinary invention, but no one could duplicate it. This is when I realized I had a truly unique dip and that I should start to share it with many more people. as time went by i continued working on perfecting my chipotle dip recipe.

Years later after deciding to make a career change, my focus went from the high tech world to the world of foods and sauces. I knew I had a passion that I had to follow. I established my own company and began to forge ahead with creating my own sauce & dip products. I have numerous friends and family to thank for their help with improvements, new ideas, and most of all their support with the start up of Toby Sauce.

as For the future, I have plans of expanding my products to include other sauces that were family favorites, tasty discoveries made while traveling to other parts of the world, and common recipes to which I add my toby twist to on purpose, not by accident.
